Understanding consumer behaviour to enable healthy and sustainable food choices – Presented by Gertrude Zeinstra, Wageningen Food and Biobased Research, at the Healthy Nutrition Conference, 27 June 2018, Brightlands Campus, Venlo, The Netherlands.

It is a great challenge to change consumers’ food choice behaviour. The presentation will provide an overview of different projects that have been executed among various target groups (children, elderly). The aim of these projects is to understand food choice behaviour as well as to develop and test strategies that help consumers move towards more healthy and sustainable food choices.

What drives you?
I really like to find pieces of the puzzel for helping people enjoying a healthy diet: making the healthy choice, the pleasurable choice.

What are the three things you would take with you on a deserted island?
My husband and children, sport shoes and reading books

What emerging technologies/trends do you see as having the greatest potential in the short and long run?
New technologies such smartphone applications, sensors, smart camera’s will have great potential in collecting data from various target groups and various settings.

What kind of impact do you expect them to have?
This will facilitate doing research and finding solutions that are easy applicable in practice.

What are the barriers that might stand in the way?
How to transfer the huge amount of data into understandable data? Also data storage and privacy

What do you hope people to learn from your presentation?
I hope they become inspired on how to change consumer behaviour into a more desirable direction. I also hope they see the added value of combining research and practice.

About Gertrude Zeinstra
I am educated as a nutrition and health researcher. My PhD thesis focused on the topic ‘Encouraging vegetable intake in children’. Supporting healthy eating among children has always been a main focus in my career, as well as a specific focus on elderly. I work now as scientist and project leader at Wageningen Food & Biobased Research, one of the research institutes of Wageningen University and Research.
